Turkey Sausage and Kale Pasta2:35 PM
Love sausage but hate the fat that comes with it? Me, too! That's why I've altered a family favorite of ours to make it a lot healthier. There's nothing wrong with indulging in your favorites, but when you're watching the scale and trying to change your eating lifestyle, some things have to change, right?
The original recipe that my family absolutely loves consisted of pork sausage, broccoli (which, of course, isn't bad!) and regular pasta. I've added the "better for you " choices and it's DELICIOUS, I promise!
First, start with the basics. Remove the casings from your turkey sausage links. This is a must to get those chunks. Saute your kale in a small fry pan. Boil your whole wheat pasta according to the package directions and grab your fat free, low sodium chicken broth. Brown sausage, add the kale, mix in the pasta and simmer in the chicken broth. It's so easy and takes no time at all!
The best thing about this recipe is that there is really no measuring required. If you only want to make enough for one, use one or two sausages, portion your kale and pasta. Want more kale and less pasta? No problem! Just remember that when you add your broth, make sure that you don't use too much. You really only want to use enough to simmer or else it will turn into more of a soup...unless that's what you're going for. (I've tried it and it's great for the cooler months!)
