Yummy Homemade Chocolate Chip Muffins12:00 AM
Start out by gathering your ingredients. You'll need 2 cups of all purpose flour, a tablespoon of baking powder, 1/2 cup of sugar, 1 teaspoon of salt, 1/3 cup of oil, 1 well-beaten egg, 11/4 cups of milk and about 1/2 cup of chocolate chips.
Start by preheating oven to 425 degrees F. Mix dry ingredients together. Create a well in the center and add your oil, milk and beaten egg. Combine all of the ingredients until moistened. Stir in your chocolate chips.
Grease your pan or liners. You can do this with either Pam with cooking oil on a paper towel. You can see that I only have 11. That's because I like my muffins bigger so I use more mix in each one.
I find that the best way to put the same amount in each is to use a measuring cup. I am using 1/2 cup so my muffins are larger. Want smaller ones, try 1/3 cup. You don't have to make sure that the cup is completely full. I just scoop and pour. Bake at 425 degrees F for 15-20 minutes. I like to bake them for half the time and then rotate the pan to bake for the second. This will give you a nice, even brown.
You'll know they're done when a toothpick inserted into the center comes out clean. Don't they just look divine?
Serve immediately with butter or store in an airtight container/bag for up to one week.
