Veggie Pasta Salad

Today, I'm going to share with you my own little creation. I love to make this in the summertime because it's a great snack or a great pairing to your hamburger fresh off the grill. Read on to see how it's done!

What You Need:

1 Box of Elbow Pasta
1 Carrot, Shaved
1/2 Green Pepper, Chopped
10 Broccoli Florets (Frozen or Fresh)
1/2 Cucumber, Thickly Sliced, Cut Up
1 Small Can Black Olives
1/4 Onion, Chopped
Italian Dressing to Taste
Various Spices (optional)

What to Do:

Start by boiling water. Cook pasta according to directions. In the meantime, prepare vegetables and place in bowl. If using frozen broccoli, place florets in a bowl of cool water.
Don't use hot water to thaw broccoli. Hot water will cook them and make them soft.
For fresh broccoli, bring a small pan of water to boil. Place broccoli florets in water for 4-5 minutes, checking them constantly to make sure they don't get too soft. Then place them in cold water to cool.
Drain pasta. Then run under cold water. Let sit to fully drain and cool, about 10 minutes. Once cooled, add spices and dressing. Then add your vegetables and coat thoroughly with dressing. I suggest to place in refrigerator for about a half hour to chill before serving.
For a crunchy topping, place croutons in a sandwich/snack bag and crush into crumbs.

Top with grated Parmesan cheese and crouton crumbs. 
*You can opt to use mayonnaise in place of Italian dressing if you prefer.
